Chocolate Avocado Pudding

Forget everything you thought you knew about healthy desserts! This Chocolate Avocado Pudding is about to become your new guilt-free obsession. Rich, velvety, and surprisingly decadent, this pudding uses the humble avocado to create an unbelievably creamy texture, while cacao delivers that deep, satisfying chocolate flavor you crave. It’s so simple to make, you’ll be wondering why you didn’t try it sooner.

Ingredients

  • 1 avocado, peeled and pitted
  • 1/2 cup sucanat
  • 1/4 cup unsweetended cacao
  • 2 teaspoons vanilla
  • 1/4 teaspoons cinnamon
  • 1/2 – 3/4 cup water

Directions

  1. Put avocado in a food processor or blender and add sucanat, cacao, vanilla, cinnamon, and 1/2 cup water.
  2. Blend until completely smooth and you no longer see any avocado bits.
  3. If too thick, add additional water a little bit at a time.

A smaller blender, like a Magic Bullet, works great for this recipe.

If you would like this recipe to be low carb, try a low glycemic sweetener instead of the sucanat.
