Avocado Dressing and Dip

Is it a dip? Dressing? Spread? This versatile avocado recipe blends the rich, velvety texture of ripe avocado with tangy Greek yogurt and a bright splash of lemon juice. It’s perfect for spreading on sandwiches, dolloping onto tacos (it’s amazing on the Crock Pot Chicken Tacos,) or simply enjoying with your favorite crudités.

Ingredients

  • 1 avocado, peeled and pitted
  • 1/2 cup plain Greek yogurt (Fage Total 0% works beautifully here)
  • 1/4 cup extra-virgin olive oil
  • juice from one small lemon
  • 1 clove garlic
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon hot pepper sauce (I like Lousiana for this recipe)
  • 1/8 teaspoon ground black pepper

Directions

  1. Blend avocado, yogurt, olive oil, lemon juice, garlic, sea salt, hot sauce, and black pepper together in a blender until smooth.

Notes

A smaller blender, like a Magic Bullet, works great for this volume of ingredients.

The salt and pepper can be adjusted to taste.

This recipe produces a wonderfully thick and creamy end result. If using as a dressing, use sturdy greens like romaine and mix your salad and dressing before serving. Or you could do what I do and pick whatever greens you want, and do the ol’ fork in the dressing first, then salad approach.
