Happy New Year! December was a family and friend filled whirlwind, and now we’re slowly getting our home “undecked” and back to normal.
Here’s a super easy recipe I adapted from Pinterest that’s perfect on a winter night (preferably a snowy winter night!)
Easy Crock Pot Chicken Tacos
- 6 boneless, skinless chicken breasts
- 1 small onion, sliced
- 1 jar of your favorite salsa
- 1 packet taco seasoning (or 3 tablespoons of Homemade Taco Seasoning Mix)
- juice of one lime
- cilantro to taste, chopped
Add the chicken breasts, taco seasoning, the jar of salsa, onion, and lime juice in the crockpot, stir and cook on high (4-6 hrs.) or low (6-8 hrs.) Once finished, you should be able to shred the chicken with a fork. Stir in cilantro just before serving, if desired. Place meat mixture in tortillas and top with your favorite toppings!

Enjoying your blog! So far I made the striped sweet potatoes ( huge hit). I even cut out the sugar added to the sweet potatoe mixture. And tonight I am trying the taco seasoning. In the past I have just been making it as I go. But that tends to lend itself to… some nights awesome and some nights not so good. And I am homeschooling one of my children this year. Well done!

When you first posted this recipe, I immediately forwarded it on to one of our daughters. I just knew it was for her and her husband. Well, they finally tried it, Becky, for company, and loved, loved, loved it (her words). They made it last week. This week, they are making it again.
