Overnight Lettuce Bacon Salad

I found this Lettuce Bacon (and cauliflower!) Salad in an Amish cookbook. It’s a classic for a reason, bringing together crisp lettuce, savory bacon, and a wonderfully creamy, slightly sweet dressing that ties it all together. This salad is perfect for a potluck, a family gathering (it’s definitely a “special occasion” salad given its fat content,) or a make-ahead meal that gets even better after a night in the fridge.

The salad assembled in layers, ready for the fridge.

While the original recipe calls for a full pound of bacon, don’t feel obligated to use that much if it’s more than you’d prefer. Even just 6 slices, as suggested in the notes, will give you plenty of bacon flavor. The beauty of this recipe lies in its simplicity and the yummy combination of textures and tastes, making it a guaranteed crowd-pleaser.
