Red Cabbage Slaw

This is my new favorite slaw – made with what I happened to have on hand that seemed to work together. ๐Ÿ™‚

Red Cabbage Slaw

  • Servings: 4-6
  • Difficulty: easy

Slaw Ingredients

  • 1 small red cabbage, thinly chopped in strips
  • 1/2 cup sweet corn (I used frozen, which I thawed with warm water)
  • 1/2 cup chopped onion
  • 1/4 cup blue cheese

Dressing Ingredients

  • 1/4 cup rice vinegar
  • 1/4 cup vegetable oil
  • 1 tsp ground dry mustard
  • 1-2 tsp agave nectar

Directions

  1. Whisk your vinegar, oil, mustard, and agave in a large bowl until well combined.
  2. Add your cabbage, corn and onion and toss to thoroughly coat with dressing.
  3. Add blue cheese and stir to combine. Allow to sit in the fridge for at least an hour before serving.


I like my slaw tangy, but you can make it as sweet as you like by adding more or less agave.

  1. Since I started gardening, I have found cabbage to be one of the most beautiful crops. I have never planted it myself but I love watching it grow in the other plots…it’s amazing how each leaf forms on top of the next…quite a site.

  2. A-ha… the blue cheese as an ingredient has be intrigued! I LOVE blue cheese! Maybe have to try this. I could do this with regular cabbage, right?
