My Not Exactly Fuji Apple Salad

The Fuji Apple Salad is one of my favorite things to order at Panera Bread (my most favorite thing on their menu is their broccoli cheese soup, but that comes with a side of guilt, so I’ve been trying to stick to the salad.) I got one the other day and it inspired me to make something similar for tomorrow, omitting the chicken since we will already be having pork loin as a main dish.

Here’s what I’m including in the salad:

  • Organic Spring Greens (store bought)
  • Red Onion
  • Blue Cheese
  • Chopped Walnuts
  • Whole Foods Brand Dried Apples (probably not Fuji apples, but that’s fine.)

To dress the salad, I’m using one of my favorite dressings: Homemade Poppyseed. Here’s the recipe (originally found on All Recipes, if I’m remembering correctly.)

Ingredients:

– 1/3 cup white sugar
– 1/2 cup white vinegar
– 1 teaspoon salt
– 1 teaspoon ground dry mustard
– 1 teaspoon grated onion
– 1 cup vegetable oil
– 1 tablespoon poppy seeds

Directions:

In a blender or food processor, combine sugar, vinegar, salt, mustard
and onion and process for 20 seconds.  With blender or food processor
on high, gradually add oil in a slow, steady stream.  Stir in poppy
seeds.

I’ll let you know how this all comes together! I’m hoping it comes close to the original.

    1. It’s so good. Plus, if you really emulsify the oil as you’re adding it, it stays so well blended and the little poppy seeds stay suspended in the dressing perfectly. 🙂
