Mango Cranberry Smoothie

This little smoothie was a bright spot in my otherwise dreary day yesterday. I had gone since November with nary a sniffle, but then…WHAM! A head cold hit out of nowhere. Well, actually, I think it came from the direction of my son’s room. But let’s not point any fingers.

As I trudged around the house yesterday morning, my head heavy and my back aching, the thought of a smoothie entered my addled brain. The ultimate reward of something cool and tangy to sip quickly overtook my fatigue and before I knew it I was raiding the fridge, freezer, and fruit basket. Mango…check! Yogurt…check! Banana that’s not completely disgusting yet…check! I even had the mental wherewithal to write down measurements as I went, just in case it was post-worthy good.

Well, it definitely made the post-worthy cut. I hope you enjoy it as much as I did. The mango and cranberry provided the perfect blend of sweet and tang, along with a healthy dose of the vitamin C that I was craving. Just what the doctor ordered on my feel yucky day. Feel free to substitute and trade out what you have on hand. That’s the joy of smoothies, after all!

Mango Cranberry Smoothie

Ingredients

Makes 2 servings (or one if you’re feeling greedy)

  • ½ cup mango (peeled, chopped)
  • 1 banana (peeled, chopped)
  • 1 (5.3 oz.) container Chobani Mango Greek Yogurt (that’s what I had on hand, substitute to your heart’s desire)
  • 1 cup orange juice (mango or apple juice would also be yummy)
  • 1½ cup ice
  • ¼ cup cranberries

Directions – Place ingredients in your blender and blend until smooth. Sip. Feel better.

Homemade Hot Cocoa

This is a rich, creamy, and (most importantly) easy homemade hot cocoa recipe. You will never want to go back to instant packets again.

The Hubberman likes to joke. Not in the “a penguin walks into a bar” sense, but more in the “I’m pulling your leg” sense. So when he looked at his phone yesterday morning and said, “Hey, they’re saying six to eight inches of snow for tomorrow,” I thought for sure he was joking. You see, he pulls this stuff so much (at least once a day) that I have to sift everything through my gullibility filter before responding. Well, imagine my surprise when Hubberman brings his phone over and shows me his weather app. Six to Eight. As the afternoon progressed, the projected totals increased. Now as I sit typing, the snow is falling and they are now predicting up to 18 inches. It is a hot cocoa day for sure.

When Life Gives You a Lemon Pitcher…

There’s a neat little antique store in Ocean City, NJ called Back in Time that I made sure to visit last week while on vacation. As I browsed the aisles, this little lemonade pitcher caught my eye. It was one of those things where you pause, pick it up, put it back down, keep on walking, only to return before you leave to snatch it up, knowing if you don’t buy it now, you’ll regret it later.

Luckily, the lids from some of my kids’ old plastic cups fit on top perfectly. So naturally, when my daughter asked to make fresh squeezed lemonade this week, I happily obliged,  knowing this pitcher would be the perfect vessel for our summer drink!

Fresh Squeezed Lemonade

Juice from 7 lemons (1 cup juice)
1/2 cup sugar
1/2 cup water, plus approx. 7 additional cups water

heat 1/2 cup water and sugar in a saucepan until the sugar is completely dissolved. Pour syrup and lemon juice in pitcher and add water. Sit under an umbrella or shade tree outside and enjoy.

Also purchased at the store were two Pyrex glassware pieces (I have a vintage Pyrex weakness) and a Coca Cola crate that I had my mom go back and get for me this week (she’s still there with my sister this week) because it was one of the items I didn’t purchase and kept thinking about! LOL.
