This is a fresh, easy salsa that requires no cooking, tomato peeling, etc.
Gotta use up the cilantro before it bolts on me!
Real Easy Salsa

Ingredients
- 4-5 medium, ripe tomatoes, chopped, seeds removed
- 1/2 large Vidalia onion, chopped
- 1/4 cup chopped fresh cilantro (less if you’re not a big fan)
- 1 medium cucumber, peeled and chopped, seedy core removed
- 1 jalapeno pepper, chopped, veins and seeds removed
- Juice of 2 small limes
- salt to taste

Great recipes. I will make it more finely chopped for my husband though he likes it more smoothe.

Bring on the cilantro! I love it. ๐
I love salsa. It is my go to condiment for literally everything. This looks so good.
Thanks! And yes, I agree – salsa is the ultimate condiment!
Oooo! I make a fresh salsa very similar to this. I do add garlic, but sometimes the fresh onion AND fresh garlic can really leave you with some kickin’ breath! Never thought about adding cucumber, though! I’ll totally have to try that! My mom made some the other day with lemon instead of lime and it was just as good!
Hi Jessica! Yes, we have used lemon too! And I had not thought of the cucumber either until I saw it used in a fresh salsa at my supermarket. It adds a nice, fresh crunch.
